  1. I'm a native from Puerto Rico.  One very good chicken meal is the arroz con pollo (rice & chicken) recipe.

I season the chicken with Adobo with Cumin, garlic salt, and pepper and I brown it on the pot with a little bit of oil, about 2 tablespoons.

To the pot, I then add 2 cups of medium grain rice, 3 cups of water, 1 small can of tomato sauce, a few spanish green olives and capers (Goya sells them mixed in jars), 1 packet of Goya chicken bouillion, 1 packet of Sazón Goya (this gives the rice the yellow/orange color), and finally, some sofrito which I buy already frozen (Goya makes it already frozen.  They sell it either  green or red if you want to add the yellow color to your rice).

Mix everything together, taste it and make sure you add salt, if needed, wait until it boils. Once it starts to boil, lower the heat to medium heat, cook uncovered until the water is absorbed by the rice, and then cover the pot, lower the heat to low-medium heat, and in 10-15 minutes, check to see if the rice is nice, fluffy and soft.  It is SO GOOD! mmmmmmmmmmmm!

A good website that I go to which has all good puerto rican recipes in Engish is: http://www.elboricua.com/recipes.html

I've tried lots of the recipes on this website and believe me...the food tastes like my grandma used to make!!!!!!!!!
