I'm sure if you explain you vegetarianism to the college tutors then they'll let you do the course with just veggie food. I was allowed to at GCSE but I didn't go on to study it at college.

The Vegetarian Society have a vegetarian cooking school - Cordon Vert.

They do courses for professional chefs and also loads of different day courses for non-chefs, including vegan ones.

I'm afraid there aren't any all veggie catering colleges doing long courses (at least, none that I know of).  The problem is convincing the catering industry that vegetarians are out there, and have money to spend on good, imaginative food when eating out ,ie not canneloni AGAIN (or for vegans, jacket potato and beans...)

I'd recommend doing some day courses at Cordon Vert and then seeing if you can find a job in a veggie restaurant (even if low paid) to get trained up. Can do all your health and safety/food hygiene courses separately and then go back to Cordon Vert and do the professional course.

I'm just trying to think of ways to get there without having to do a course about meat...
