get about 5ft of 3" pvc pipe, get a cap fitting for the end.  Get a piezio-electric switch - whatever its diameter is, drill a 1/16" smaller diameter hole at the cap-end of the pvc - s***w the piezio- into it.  Get a rasp and file the other end of the pipe to a sharp rim (this trims the potatoes nicely as you jam 'em in).

Get a can of hairspray or deodorant (alcohol-based propellant) - spray a fair bit into the pipe - jam a tater in - push it down with a broomstick - puch the piezeo with the broomstick (you'll hafta experiment on how much propellant to use)
