Supposedly, a lumberjack who wanted to fight someone--anyone--on a Saturday night would put a wood chip on his shoulder and walk around town--or the tavern--with it.  So, if anyone inadvertantly knocked the chip off his shoulder, he would have something to accuse that person of, and get into an argument, and have his fight.  If you didn't want to fight, you'd stay away from someone showing that kind of belligerance.
