  1. I eat this kebabs and are great.Is made from chips,salad,tomatoes,meat and a lot of delicious things. ;)


  2. Shami kebabs or patties may be the best kebabs in the world. These kebabs are made exceptionally silky due to the addition of the channa dal and the fine mincing in an electric mincer/blender. The result is a smooth, soft, melt-in-the-mouth patties.

    They can be made in advance, frozen and fried when needed. This pan-fried kabab can be made with goat meat/mutton or lamb or beef but tastes best when made with mutton or lamb. Serve it with Mint-Coriander Chutney.

    INGREDIENTS:

    1 lb. lamb mince boiled - with no water left after the meat is boiled

    4 oz. chana daal - with no water left after the lentil is boiled

    2 tbsp garam masala

    minced fresh green chilies to taste

    1 tbsp. garlic minced

    1 tbsp. ginger minced

    2 tbsp. very finely minced cilantro

    2 tsp. coriander powder

    1 tsp. cumin powder

    Salt and fresh lime juice to taste

    ghee or oil to shallow fry

    PREPARATION:

    Grind all ingredients except the cilantro into a thick dough in your food processor.  Now add the cilantro. Shape into patties.

    Heat the cooking oil/ghee on a heavy-bottomed skillet and shallow fry the kababs till golden on both sides.

    Hint: if the patty is faliing apart at the time of pan frying - add one egg to the mixture by folding the egg into the meat dough.

      Ingredients

    Mutton mince  1½ cups

    Bengal gram split (chana dal)  2 tbsps

    Green cardamoms 2

    Cinnamon 2-inch stick

    Cloves 3

    Salt  to taste

    Ginger (finely chopped) 1inch piece

    Garlic (finely chopped)  10 cloves

    Red chilli powder 1 tsp

    Garam masala powder 1 tsp

    Peppercorns 5-6

    Coriander powder ½ tsp

    Cumin powder  ÃƒÂ‚½ tsp

    Onion (finely chopped) 1 large sized

    Fresh mint leaves (chopped) a few sprigs

    Fresh coriander leaves (chopped) a few sprigs

    Lemon juice 1 tbsp

    Egg (beaten)  1

    Ghee  to shallow fry



      

    METHOD

      

      

    1. Wash the mutton mince thoroughly and drain. Wash and soak the chana dal for half an hour.



    2. To the mince, add the chana dal, cardamoms, cinnamon, cloves, one cup of warm water, salt to taste and then cook till dry.



    3. Remove from heat and add chopped ginger, chopped garlic, red chilli powder, garam masalas powder, peppercorns, coriander powder and cumin powder. Grind to a fine paste and knead well.



    4. For stuffing mix together finely chopped onion, chopped mint leaves, chopped coriander leaves, lemon juice and salt to taste.



    5. Divide the mutton mixture into lemon-sized balls, flatten each ball in the palm of your hand and stuff with a little of the onion mixture.  



    6. Shape into kababs and dip in the beaten egg.



    7. Heat a tawa and shallow fry the kababs on both sides with ghee till golden. Drain onto an absorbent paper.



    8. Serve with green chutney.

    Ingredients

    ½ kg. mince meat

    ¼ tsp. ground garlic

    ¼ tsp. red chilli powder

    2 tbsps. Split gram peas

    ¼ tsp. ground ginger

    2 eggs

    Cooking oil

    Ingredients: Filling

    1 small onion

    2 green chillies

    A few coriander leaves

    Enough yoghurt to mix to a creamy consistency with the chopped onions, green chillies and coriander leaves.

    Add salt to taste

    Instructions

    Boil together meat, split gram and the spices till the meat and the gram are tender and no water remains.

    Let the mixture cool then pass through a mincing machine to blend all ingredients together into a paste.

    Divide the meat paste into portions.

    Hollow out each portion and put in a little of the filling.

    Pat into flat round cakes, dip in beaten egg and shallow fry in Cooking oil until deep brown.
