  1. stir fried chicken with carrots, celery and potatoes, with tomato rice.

  2. Put your chicken in a bowl, season with salt, pepper, basil, parsley and then pour a little olive oil on to coat. Get your skillet hot, place chicken in and let it grill on one side then turn on the other side. When chicken is done then place in dish with lid to keep warm. Then in the same skillet put you some diced onions, carrots and celery and saute. When almost ready you can put a little sauce on if you want, I just leave it like that. Serve aver rice or pasta and place chicken on top.

  3. Cheesy Chicken Pasta.

    Chicken.

Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.

    Pasta.

Place in salted boiling water and cook until you get the degree of cooking you like.

Penne or Elbows will do very well here.

    Sauce.

Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

  4. Creamy Chicken Curry Casserole

Brown your chx b*****s with the onions, celery, and carrots.

Boil your rice and potatos (seperate pots) till 2/3 done.

In large bowl add chx(cut into bite size pieces), potatos, rice, veggies, cream, curry, spices, and tomatoes. Mix well.

In a roasting pan add chx and others evenly. Add 2 c chx stock cover with plastic wrap and then foil and bake at 350F for 35 minutes.

Uncover and coat with cheese and throw back in the oven till cheese is melted.

Garnish with yogurt and curry powder.

  5. you could make a chicken biryani.its an ancient moghul preparation of chicken ,rice, curd, potatoes etc.first heat the pan with oil and add some garlic and onions if u have.cut the chicken and season it with salt, curry powder and any other spices you have.add the cut potatoes to the pan and fry a bit.then add the chicken and let it fry for a while.add the tomatoes, bay leaves, salt, pepper, spices and then add the pre soaked rice and mix well.add the water till the rice is covered and bring to boil.when th rice is almost done, add the curd or yoghurt, mix well and heat till the rice is fully done.dont forget to taste before serving.the real biriyani involves more ingredients, spices etc and is an elaborate recipe and preparation involves lot of work.but for today, this will do.

remember to serve hot and enjoy.
