  1. Panko, way different than regular bread crumbs!


  2. They are made by grating the bread so that the pieces are longer and sharper, rather than normal breadcrumbs which are crushed and crumbled and rounder.  You can get them at stores that sell ethnic foods.

  3. Japanese breadcrumbs are called Panko which literally means "Bread Children"  They are lighter than normal break crumbs and are more flake-like in texture.  Very nice for some deep frying but not good for foods that need to cook for a long time.

    I get the idea they are par fried instead of being baked like normal bread crumbs.

  4. PANKO ..... they're much lighter and crisper than regular bread crumbs.  My box says they're wheat flour, soybean oil, yeast & salt.  Once you use them, you won't want to use bread crumbs anymore;)

  5. Everybody has some good points, I worked in Japan and "snowbarbie" and the other girls are closest, they are grated, not fried although, are made from a special bread as the first lady said, lighter as the are air dried in a tumbler.

    In Japan, they are only used as a coating, no one would think of using them as a binder to make burgers, meatloaf or meatballs, but they do work in those recipes, I like them on Tonkatsu the breaded pork cultlet, and you can make a faux one with firm tofu and serve in on rice with braised cabbage and veggie version of the sauce.

    They are a bit pricey compared to US and Canada, were we just dry the bread and grind it up, about 4 X the price of regular breadcrumbs, and in some cases difficult to find, but there are mail order place to buy them on-line. I buy them here in Toronto Canada, in the Asian stores and at my Japanese supermarkets.

  6. You can purchase panko at most major supermarkets now. It used to be a specialty item that only Asian markets carried but with the Food Network's influence, the selection is much better today.

    Don't try to substitute regular breadcrumbs for panko.
