I've been heavy handed with the ginger and it's overpowered everything. Does anyone know any tricks which might rescue the situation.... apart from starting again that is.

  1. Take some of the keema mixture (with the ginger) out and add some plain keema until the mixture tastes normal.

  2. You could try stretching it by adding some grated potato into the mix and extra jeera powder and the other spices you normally use, except for the ginger. But I can't imagine too much ginger.. sounds yummy!

  3. You can add more keema if you have any left

    if not

add tomato - they are really good. it could be tomato paste, real tomato or add bit of tomato pasta sauce

also you can add bit garlic too, and oinion leaves, spinach. anything.

it wont ruin it at all

    i love samosa's. my weakness

  4. Since you say kheema samosas ,i take it that the plain kheema stage is a thing of the past , now the only trick is to fall back on acc ompanimets , thick tamarind based chutneys , chopped onion, green chillies & cilantro (like the raita mix ),mixed into sweet sour tomato sauce ,boiled diced potato tossed with spices of choice other than ginger of course .Follow with iced tea & hope for the best .

  5. Add little cashew powder.

  6. The easiest way is to simple add 2-3 tbsp of tomato paste depending on the quantity of filing, that should do the trick!

I love ginger but I know that sharp spicy "too much ginger" taste you are talking about, it can be overwhelming & overpowering.  No problem, it happens.  Try the tom paste trick --- easy & effective.  Enjoy your samosas, now you got me craving them!

If you have already made the samosas, just eat them with Indian tomato sauce, tamarind & cilantro chutneys.

  7. I hope you have just made the filling.  If you have already finished cooking, You just have to have a sweet syrupy chutney to go with it.

I can understand Ginger can be overpowering.  You have made just the mixture.  Add seasoned keema, cilantro, mint and some lemon juice.

    You can only try.
