Homemade pancetta?

I would like my home made pancetta but i do not wanna use pink salt.....

Here's a recipe with detailed instructions.  They mention that you can use pink salt, but they prefer using kosher salt  instead and that's how the recipe is written.

I have never made mine with pink salt.....it always came out great
