Depending on the level of care applicable in the context of your question...

Learn and apply the differences in cultural acceptance of revealed skin areas and touch.  ie a Muslim women whilst accepting washing assistance may require that her upper body remains covered.  Even if the only other person present is female.

The acceptable PC Twaddle is now 'Service User' I think.  Next will be 'Customer'.  'Person' should be good enough and recognises the individuality of a person and avoids a differentiating label but some little think tank is probably getting paid enough to pay a dozen Care Assistants at the sharp end to come up with such a label.
