Question:

Honey that crystallizes= pure honey???

I was told that if the honey i bought crystallizes and gets thick that means that the honey is pure (without any glucose or isoglucose or something like that)

If this is true most supermarket honeys aren't pure because they don't crystallize.

  1. Well, what I heard is that if honey crystalizes that means that its not pure and has added sugar. Pure honey should not crystalize. Further more, pure honey is actually not very sweet. Its got a slightly sour taste to it..

  2. Pure honey does crystallize. We used to raise honeybees and never added anything to the honey, and it always crystallized.

(And yes, it was plenty sweet. The sweetness might depend on what flowers the bees use - the darker colored honeys might be less sweet. Ours was mostly clover honey, so it was plenty sweet.)

  3. Ha..never thought about it, but my 'fresh' honey always crystallizes!  My store bought never does...good point!
