I like chocolate paired with any fruit or nut flavor.  Fruits paired together work well.  My favorite shisha tobacco combination is coconut and chai.

just get mixed fruit.  My favorite is white grape.  Also try using orange juice in the base of the hookah instead of water.  Also Rose water in the bottom also adds flavor to the tobacco
