I am an expat living in Thailand and have found this useful rule of thumb... if you really want something and say it is 500Bht, then start at a little over 1/2, they will pull face and say no.  It gives them somewhere to start and you can barter back and forward until you are happy with result.  Never be rude, but feel free to smile and walk away if not happy, they may come after you with price you are happy with.
