Le Comptoir du Panthéon at 5 rue Soufflot is quite nice. A traditional brasserie with straightforward food.

Crepes a Gogo, across the street from the above at 12 rue Soufflot is much better than the name sounds. A nice place for a light lunch. If you're a big fan of crepes there is an all you can eat special on tuesday nights.

Perraudin at 157 rue St-Jacques is another traditional french bistrot.

If you're looking for an inexpensive meal the just south of the corner of the rue St. Jacques and the rue Soufflot on the right hand side of the street as you head south, there is a really nice little Vietnamese cafeteria (I can't recall the anme at the moment). the foood is quite good and really cheap (by Paris standards).
