I play the clarinet, the sax, and the flute and i really want to get into a big symphony and how old do i have to be?

Most symphony players have a music degree and years of playing in orchestras behind them.  You need to pick one instrument (clarinet or flute, symphonies don't have specific sax players as there's usually someone in the clarinet section who can double it) and concentrate on that; join local orchestras, get experience and then study your instrument at university.  Once you've graduated, start auditioning...
