  1. Fried rice = Stir-fly the rice

Egg-fried rice is easy to prepare and tastes great as a meal on its own. For the best result, make sure the rice is cooked and cooled beforehand so it won't stick together when frying.

    Ingredients

    1 egg

    2 tsp sesame oil

    2 tbsp vegetable oil

200g/7oz long-grain rice (uncooked weight), cooked and left to go cold

100g/4oz frozen peas, defrosted (rinse under warm water to do this quickly)

    4 spring onions, finely chopped

    100g/4oz bean sprouts (optional)

    1-2 tsp soy sauce

    ground white pepper

    Method

    1. Beat together the egg and sesame oil and put to one side.

    2. Heat the vegetable oil in a wok or large frying pan. When it's shimmering and almost smoking, add the rice and stir-fry for about 3-4 minutes until completely heated through.

    3. Add the peas, spring onions and beansprouts, if using. Stir-fry, turning the rice constantly around the pan, for about 3 minutes. Season well with soy sauce and pepper, then push to one side of the pan. Pour the beaten egg mixture into the other side and leave for about 10 seconds so it begins to set. Using a chopstick, briskly swirl around the egg to break it up and then toss around with the rice. Stir-fry for a further minute and serve straight away.

    Tip:

You could include some extras like chopped ham, cooked prawns or sweetcorn, when adding the peas.

    Voila!!!

    Enjoy!!!

  2. The trick in making perfect fried rice is, use cold cooked rice.

You can put whatever you like in your fried rice, but be sure to mix it all together prior to cooking in hot oil. Cook in small batches.

  3. Fried rice is quite easy to make.  You need to make steamed rice (white or brown, your choice.)  It works better with day old rice, or just let it cool enough for it to be firm.  You will also need two scrambled eggs, cooked meat (shredded or cut in small pieces) and chopped green onions.  Salt, pepper and soy sauce.

In a wok or skillet heat some vegetable oil, stir fry your rice adding salt, pepper and soy sauce to taste.  Add your remaining ingredients.

    That is all.

If you want you may add other veggies like peas, carrots, etc.

  4. SIMPLY SHRIMP FRIED RICE

1-1/2 cups rice, cooked - more if desired.

20-25 SMALL shrimp, or a pound of boneless chicken or pork. you can add all of them together if you want.

1 onion -optional. but it does smell and taste better if added.

1 egg - more if desired.

    3/4 cup peas - optional

    1 green onion, chopped.

1 clove garlic, minced -optional. i usually dont put it cause i hate garlic.

    1/4 cup soy sauce

butter or oil - i use oil.

Cook rice as directed, approximately 1-1/2 cups.

In a medium-sized frying pan, sauté 1 small chopped onion, and 3/4 cup frozen peas in butter or oil. Set aside.

Next, sauté 20-25 small shrimp, pork and or chicken with 1 large clove of garlic in butter or oil. When lightly brown, add vegetable mixture. Set aside.

After, quickly scramble an egg, more if desired, and then, add in all the vegetables and shrimps. Scoop the cooked rice into the pot, add 1/4 cup of soy sauce, and the chopped green onions.

Stir, simmer for a few minutes and enjoy !
