How are Dippin' Dots made and what are they made of?

Every time I eat them I wonder how they are made...also...what they are made of. Is it frozen ice-cream?

    Dippin' Dots are beads of cryogenically frozen ice cream. They use a combination of natural ice cream ingredients, the same found in conventional ice cream, and flash freeze it into tiny beads.

    Dippin' Dots are tiny beads of ice cream, yogurt, sherbet and flavored ice.

  7. They are ice cream.  (well, some varieties are sherbets or ices...)

    The ice cream liquid is squirted into super-chilled air at a height... the droplets of liquid freeze as they fall, and fall into little balls of frozen liquid.  They are then super-chilled in storage and transport so they keep their shape and do not melt or freeze together.  Pretty cool process, really.
