  1. the spores ("seeds") are floating around in the air all the time.  As soon as you open the bread, some land on it.  Takes a while for the colonies to take hold, particularly with store bought bread that is full of preservatives.


  2. Busterm is quite correct, but you must also realize that not all the yeast is killed in the baking process; and it is this portion that contributes to the particular mold that one encounters on the bread.
