ASK...seriously.  The best approach would be to first phone or call in and ask when is a convenient time (remember at the start of a shift things are VERY busy), so let her tell you what time is best.  Tell her how long you expect the Interview will take and what sort of information you will be asking for.

well its all about timing must restaurant managers are cool when they have free time to try from 2-4 monday- thursday... which is most restaurant's dead time and i'm sure they will be more then happy to help....
