How can I eat a lot of veggies?

I've come to realize I don't eat very many veggies. (about 2 or less servings a day)..

How can I incorporate my veggies in to my diet?

What are some good recipes, like vegetable bake?

  2. Stir fries, salads with lots of different veggies, veggie sandwiches.  Make sure you have some sort of veggie on your plate with your dinner, even if it's heating up a frozen veggie mix.

  3. Soups. Veggie soups. Go to vegweb.com and search soup.

  4. If you make a vegetarian chili or pasta sauce, put some finely grated carrots into it.  It acts as a natural sweetener and thickener (and you won't really taste them)  ......BBQ red/green bell pepper, zucchini & crookneck squash, cut in halves; brushed with olive oil & sprinkled with oregano & garlic salt  ...  BBQ whole portobello mushrooms, and eat on onion rolls with lettuce, tomato & onions.....

  5. One of my fave things to have for supper is a big mix of roasted veggies. I chop up sweet potatoes, green, red, yellow peppers, red onion, zuchini, carrots, celery, butternut squash, asperagus, mushrooms and just about any veggie you can think of that you have really. Then toss with some olive oil, garlic, thyme, or just a bit of vinegerette salad dressing (I like roasted red pepper or sundried tomato by Kraft). Then roast in the oven for about 4 mintues until veggies are cooked through and carmeralized.

    Also have a side salad with every meal and add more than just the old stand by lettuce etc. I toss in snow peas, broccoli, bell peppers, cucumbers, grape tomatoes etc.

    Snack on raw veggies throughout the day. Keep baby carrots, celery sticks, sliced cucumbers etc on hand in the fridge and grab those when you feel like a snack, saves you from reaching for junk and gets veggies in :)

  7. A stirfry is always a good way to get alot of vegetables. I make it with tofu, all sorta of vegetables and different sauces. Another way is to make individual pies. You chop up all the vegetables you want and tofu or you could use soy meat slices and you put in in pastry.
