Question:

How can I enjoy raw vegetables?

I don't get how you vegans, vegetarians do it... I've always hated vegetables my entire life, especially raw ones. I'm a big fan of meat, cheese, and salty things. No soups (unless it's miso) or salads. But raw veggies are the ones with the health benefits, so it's no good trying to cook them into something. But I really want to be healthy.(duh who doesn't?) How can I make them bearable? Are there any less-than-common types of veggies that people eat just for the taste?

  1. Don't force yourself to eat something you don't like. Vegetables that are frozen (and canned tomatoes) are picked at peak freshness and retain many of their nutrients. Also try sneaking veggies into cooked foods like lasagna, chili, salsa, pasta dishes, or rice dishes.  Eating vegetables in any form is probably better than eating very little of the raw form. Also, have you considered V-8 or the V-8 juice combos? They are pretty good and can be incorporated into foods. Use v-8 as a base for your chili! If all else fails, mix up a good bloody mary with lots of celery, carrot sticks, and olives. Vodka makes everything better! Seriously, eat what you enjoy!

  5. well i don't really enjoy them either but i have to eat them so what i do is put lemon on the vegetables and if u want u can use salt BUT sea salt is better than regular its better for u too as well, not as fattening but just a little sea salt is fine

  6. I make dips with lo-fat yoghurt & sour-cream, 50/50.

    Add dried herb mixes with lemon juice for flavour, or horse-radish.

    Put in a dollop of mayo if you want some preservatives.

    Stir-fry is the best way to use a variety of vegetables.

    Salads are good in hot weather.

  7. Find a salad dressing you like and load the salad up with a variety of fresh veggies. Try Balsamic Vinegar straight up.

    Blanched asparagus is quite tasty.

    BTW-Eating cooked veggies is better than not eating them at all.

  8. I was going to say just keep trying until you find one you like but sounds like you've been looking.  How about dipping them in fat free or low fat dressing--which does NOT have to be Ranch--I love French, its so tangy.  

    I'm not sure old you are but I promise, you palate gets more refined as you age.  I enjoy veggies now at 43, that even 10 years ago I never ever thought I would eat!!!  Take tomatoes for instance, I don't like them---the whole thing is more a texture factor than anything--but I have discovered grape tomatoes and I love dipping those in some low fat French.  Or putting them on my salad.

  9. I really enjoy dipping veggies in hummus (broccoli, snap peas, carrot sticks) or light ranch dressing.
