I need to write these into a signal flow diagram in which I have to name the type of cable and also the name of the connector? How can I find this out? What is the normal name for a cable that comes with headphones if its not XLR (audio)?

  1. Gold plated Unimatch Plug

Plug contains 3.5 mm and 6.3 mm adaptor

That is what it says in the features section of the headphones.

Above answer has the link I was thinking of...x*x..

  2. the 3.5 mm connector is the small one used to connect to most audio devices (iPod, Computer, etc.)  The large one is 6.35mm which can connect to XLR or anything else.

Both are technically called TRS connector (Tip, Ring, Sleeve) but that is just the type.  A common name is "Stereo Mini-jack" but "3.5mm stereo mini--jack" might be your best choice.

The cable type is just a stereo audio cable.  But normally the cable type isn't that important, it's the connectors that make the cable what it is.
