How can I get my home made ice cream to come out as smooth as store bought?

I use a Cuisinart Ice cream maker and usually use half and half cream to make it. even if I use heavy cream it still comes out grainy. Make an uncooked ice cream. Any suggestions?

  1. I always let my sugars dissolve in the cream and milk mixture before adding to my cuisinart. I haven't had a problem with the ice cream being grainy. It does help to use more fat to get a smoother texture. Try my vanilla ice cream recipe it's very creamy and doesn't require eggs or cooking.

  2. By adding unflavored geletin to your recipe you can have smooth results like Dairy Queen. Also Glycerine works too. There are many recipes online that explain how to use these ingredients. Good Luck!

  3. I would say that store bought ice cream makers use thickeners that I am not sure you can buy.

  4. Not cooking it is most of your problem.

    The fat in the slightly cooked egg yolks is highly elastic.

    Using lecithin may help but try to avoid the chemistry as well as any suggestions from anyone claiming to be a PhD that hangs out here.

  5. There is actually a science to the ingredients in ice cream.  I've messed around alot with it.  I found the creamiest ice cream has to have heavy cream and egg yolks.

Commercial ice cream manufacturers use ice crystal inhibitors and very sophisticated scraped surface heat exchanges to get their ice cream smooth.  These inhibitors include gum and thickeners.  Many of the previous answers are on the right track with eggs and gelatin they may help.  If you can increase the speed of you dasher that would help. Also the cold side of the heat exchanger must be as cold as possible.  One other think you might try is to add only small amounts to the dasher at a time.  This will bring down the temperature of the ice cream mix faster.
