How can I make cakes spongy and tasty without using eggs in a convectional microwave?

  1. I wouldn't use a microwave to make cakes. It makes them taste gross. but here is a recipe for vegan sponge cake.

    Ingredients:

    55g vegan margarine

    55g raw cane sugar

    1tbs soy flour

    2tbs water few drops vanilla essence

    100g self raising flour

    1/2tsp baking powder

    15g cornflour (cornstarch)

    4tbs soy milk

    Method:

    1) Cream the margarine and sugar together untill fluffy

    2) Mix soy flour into water with a fork. Mix into the maragaine mixture an little at a time. add the vanilla essence.

    3) Mix the four, baking powder and cornflour together. Add them to the bowl, together with enough soy milk to make the batter of dropping consistency.

    4) Put batter into baking tray and bake at 190 deg Celcius for 20 minutes, or untill firm to the touch and beggining to shrink away from the pan.

    note the baking time may vary depending on your oven .
