How can I make marinated chickens to be grilled last for a month?

I hav recently started a business on grilled chicknes. so far i marinated chicken, kept it in freezer for 12 hours and thengrilled them. then the marination was thrown away. is there any way i could reuse the marination?

  1. Think of the marinade as the downfall of your business. The few bucks you could save by reusing it, you'd probably pay thousandfold in damages.

    Reuse it in your own home, if you like - law has no limit as to what you are allowed to do to yourself ...

  2. no, not ever, especially with chicken!!!!! didn't you have to take Food Service Sanitation classes???!!!!!! It would really be in your best interest, before you poison the public, to attend this class. Where's your business?? I don't want to go there by mistake!!!!!!!!!

  3. NO NO NO NO NO, do you want to poisin your guests? Cuase thats a good way to do it. Marinades if made fresh daily can last for 1 full day. But what your talking about doing is Cross contaminating everything the marinade touches and retouches, BAD JUJU. If your running a resturant Go take some Sanitation and Safty classes ASAP. If you really want to lose customers keep doing what your doing and soon you will get a visit from the local Health Offices to shut you down. I really hope your using safe handeling techniques and proper food storage guidlines.

  4. You should not reuse the marinade after marinating foods. You should discard any product that was used to marinate food and was not cooked. To avoid contaminating marinade, never place dirty or used utensils, such as basting brushes, into the bottle and do not pour used marinade back into the bottle.
