How can I make sausage and peppers for a big group?

Having a big party and want to make a large batch of sausage and peppers. When I've gone to a catered party they always have the sausage and peppers in a good amount of liquid. Is that just the liquide from the peppers? How should I cook it?

  1. This is one of my husband's very favorite dinners, and super easy.  

    SAUSAGE & PEPPERS

    2 pkg. Italian sausage (I use 1 hot & 1 mild)

    2-3 sliced bell peppers (I like to use red and green or yellow)

    1 sliced white onion

    1 can diced tomatoes (I use with Italian seasoning)

    cooked rigatoni

    Cut the sausages into 1-2" pieces and brown in oil in large pot.  Add bell peppers and onions, and cook until semi-soft.  Add the can of tomatoes with liquid, and simmer (covered) at least 45 min, although you can let it simmer up to a couple of hours too .....  Serve over pasta .... serves about 6-8

    No extra water is added.  There's enough liquid in the peppers & sausage


  2. ITALIAN SAUSAGE AND PEPPERS

    Serves 50

    Ingredients:

          12 lbs. Italian Sausage cut in 3" pieces

          20 large green peppers, seeded and sliced

          8 lbs. onion, sliced

          2-3 cans beer (sub. 7-Up or apple juice if desired with maybe a tablespoon of balsamic vinegar)

    Preparation:

    Cooks to perfection in an 18 quart roaster.

    Put all above into a roaster. Stir occasionally. Cook at 250 - 300 degrees for most of the day (4-5 hours). Serve the sausage and peppers and onions on French bread.

    ITALIAN SAUSAGE AND PEPPERS FOR A CROWD

    SERVES 36

    Ingredients:

    16 sweet Italian sausages

    16 hot Italian sausages

    20 Italian frying peppers, cored, seeded, and halved

    4   large onions, thinly sliced

    12 garlic cloves, lightly smashed

         Salt and pepper to taste

    1/2 cup olive oil

    Directions

    Preheat the oven to 400°F.

    Place sausages in a roasting pan. Add the peppers, onions, garlic, and salt and pepper. Drizzle with olive oil.

    Roast the sausages for approximately I hour, turning occasionally, until they are nicely browned. Arrange on a platter and serve.

    SAUSAGE AND PEPPERS FOR A CROWD

    SERVES 50

    Ingredients:

        * 100 Italian mild or sweet sausages

        * 60 green bell peppers, seeded and sliced in strips

        * 14 large onions, thinly sliced

        * 20 cloves of garlic (more or less to taste)

        * salt and pepper to taste

        * 2 cups olive oil

    Instructions:

        * Preheat oven to 400 degrees

        * place sausage in roasting pans

        * evenly divide peppers, onions, garlic and salt and pepper into each roasting pan

        * Drizzle with olive oil.

        * Roast for about 50 minutes, turning occasionally.

        * Sausages should be slightly browned.

    NOTE: This recipe is good for 50 people. Figure 2 sausages a piece. If you are having another meat, you can reduce this number.

    If you know the crowd and they like things a little hotter you can use hot sausage or mix it up. It is usually safer with a large crowd to make things less strong.

    Provide crushed red pepper in a bowl if people want to add some heat.

  3. yes he liquid is what comes out of the peppers after they sit for a while while being heated.

    You need to satay them in a little bit of oil, butter if you prefer. Just cook a large batch, thats all

  4. that liquid is mostly the oil from frying peppers

    i make this often for large groups

    slice peppers and onion into strips

    in one pan fry sausage until brown. once brown cut into 1 inch pieces and brown those on all sides.

    in another pan sautee onions garlic peppers in oil with salt and pepper. once veggies are soft add sausage to peppers and heat thru. add to foil pan and keep warm in oven.
