How can I prevent hash browns from turning gray during cooking when making them from raw potatoes ?

  1. It's air coming in contact with the raw starch that makes them look a bit gray.  Shred them right into a bowl cold water until you're ready to put them in the pan.  Then squeeze out the excess water and go ahead and cook them right away.

    Or, my favorite way is to par-boil the peeled potatoes then shred them before frying them.


  2. well that usually doesnt happen? mayb try using an oil to cook them in?!

  3. as you slice them soak in a ice water with lemon juice for a minute then drain same like of potato chips.

  4. use a little lemon juice on them and they wont turn brown.but i dont know why they are turning brown unless your not using them up right away
