Question:

How can I "punch up" a chicken noodle soup recipie?

I know how to make it, anyone have a different idea for the classic soup?

  1. Well for one, as far as chicken goes, you can always bake it before you get ready to make the soup, and when baking it, bake it with multiple seasons so that the chicken will be marinated as it enters the soup, then using like Swanson's chicken broth, or even this mexican broth called Maggi that will help savor the flavor even more. Try also to add veggies that you wouldnt normally use like eggplant or cauliflower. Ahhh just a suggestion!


  2. Bay Leaf, Garlic and Black Peppercorns -cook whole while simmering broth.

    I also add a dash of hot pepper sauce like Tobasco or Louisianna Hot Sauce, not enough to make it hot, just enough to give it the pepper flavour.  Sometimes I use wild rice instead of noodles.  Sometimes I put finely sliced green onions in just before serving.

  4. To really Punch it up stir in some chile garlic sauce.  Be careful, it is powerful hot!

Use bigger chunks of meat and veggies.  Parsley really makes it taste like chicken soup.  Use some fresh.  As suggest cracked black pepper corns will taste great too.  When you serve it place tortilla chips in the bottom of a bowl, add the soup then top with jack cheese.  Even mozzarella would be great.  It has to be a cheese that melts but is gooey like.  You can also cut up some corn on the cob into small pieces and add them too. (cook them before or in the soup itself).  You don't want to add to many other things because it will stop being chicken soup and end up something else.  Good Luck.....if you have left overs I'm good for them lol.

    I also like to add corn, Then top with cruchy lightly spicy tortilla chips, or use a roux and make a thicker base. You could also add bacon!

  7. Put some old bay seasoning and cracked pepper in it to give it a little kick.  Add some additional veggies like corn, broccoli, carrots, celery, peppers etc.

When I was growing up my dad had this Greek friend who would make this yummy chicken noodle soup (greek style he said).  You heat the chicken broth (you can put whatever veggies you want, or even no veggies).  Take a couple eggs and whisk them, introduce some of the stock into the eggs, always a little at a time so you don't curdle the eggs.  Keep putting soup into the eggs a few soupfuls at a time until the egg mix starts getting as hot as the soup, then pour the eggs into the soup stock pot.  The soup should turn this nice even light yellow.  Squeeze a couple of lemons into the soup, add noodles.

  10. Add some canned mushrooms. Also add some black pepper, basil and parsley to the broth.

Kick it up with a little red pepper.  Also try using some not so traditional veggies like leeks and fennel (I love the taste fennel lends to things plus it keeps it's texture well)  When the soup is done, put some into the bowls and snip some of the fennel frawns on top for a nice presentation.  Enjoy
