How can I suggestively sell items as a server?

I need some help here. I just became a server at a steakhouse and I need some help on how to suggestively sell items to my tables. For instance when greeting I say something along the lines of "Would you like to start off with a margarita or a cold beer tonight?" and more times than not people don't buy it. I realize not everyone is going to, but how can I be more persuasive? Same thing for add-ons and upselling.. I say things like "would you like to add mushrooms or onions to your steak ma'am?" but it's just not cutting it. I really want to improve my sales and bar mix but not sure how to do it. Am I saying the wrong thing? Is it the way I'm saying it? What do I say? Thank you for your help.

  1. you have to play your tables, and i know that sounds awful, but you need to really feel them out. if a guy sits down and looks like a drinker, let him know.. you know, we have a feature beer tonight, it's a $3 handcrafted draft, and it's AWESOME. try to describe it and kind of "pair" it with food that would go well. and plant things in their head, like, oh and while i grab your drinks check out the specialties section of the menu, we've got the best ribs in town!


  2. the best bser wins. why not just serve the d**n table. i know i wouldnt want to dine out and have a server trying to persuade me to order certain items. i'd think what a loopy chick. want fries with that? however, if you are a hot looking woman, most guys are not going to mind you standing there; reading the entire menu. :) they'll think it's cute or something.

    first dont ask yes or no questions. what they said about sizing up the table is right. if people are paired they may be happy and would like drinks etc. i think the restaurant could perhaps get a beverage menu that could sit on the table or come separately with the menu. definately tell them what the house specials are but it sounds to me like you should focus more on just being a good server rather than trying to milk each customer for every last penny. say it informatively or in a friendly way; if you're being honest they can tell.

    but i'm sure other servers will tell you it's all about you and what you can make and not about the customer. that's the sad state of things.

  3. you got the hang of it, it's a tough economy now and not alot will bite, but don't let that get you down, every table every upsale, cocktails mush onion desserts, every table

Be more creative.  Use descriptive word or paint a picture.  Make it sound like a whole experience.  i.e. I recommend the caramelized Vidalia onions and sauteed Morel mushrooms with our award winning New York Strip.  or "an ice cold, hand crafted micro brew such as [name of beer] would be a perfect compliment to your appetizer sampler.  Find out what sets your restaurant/bar apart.  At which temp. do you serve your draft beers at, do you use a special glass or brand of glass for wines.  Talk to the chef, what combo's does he/she suggest, then you can up sell by calling it "the chef's favorite: combination, pairing, etc."

  5. Describe your items...knowledge is the key! Always suggest additives...if you've tried it..tell your customer how awesome it is (or do Like I did and lie...I don't even eat steak lol)

  6. Did they tell you to try and sell items?

    Customers do not really like feeling pressured or intimidated and it will reflect on your tip.

    You can ask "what can I get you to drink?" and more than likely they will give you an order.

    You can also ask "what kind of topping would you like on that?" or "any topping on that?"  but beware that they do not assume it free as they will be really upset at you when they see the bill and will complain.or leave a very small tip.

    You are not a salesman but a server or waiter and unless they told you to do it then I would refrain from trying to sell.

    If they did tell you then ask your supervisor how he would like you to phrase it. There is nothing wrong with asking and more often than not they have their own ideas and will be pleased to tell you just how to go about it..

  8. be very descriptive, would you like a ice cold beer with that?  want some hot wings with that or a chilled salad?
