How can I tell my boss I've got a holiday booked? Writing a letter...

I've recently got a job working at an upmarket grocers, and I've got two 2 week holidays booked, one to Thailand at the start of next month, and one to Vietnam in late October-early november.

I'm informing him in a letter, and I'd like to say I'd be more than happy for them to give me the sack and hire someone else, and I'd stay on until an agreed period while they found someone, as I've got 2 better jobs to fall back on which pay a lot more.

How can I phrase this letter?

Frankly the time to tell your new employer that you had planned vacation time was when you were interviewing for the job not after.  So now it is a moot point and one that could get you fired.  I have started many positions that I know that within two months I have an annual vacation at our timeshare in Mexico.  I have always told them upfront to find out if it is a deal breaker and they were willing to work with me.  But telling a new employer after the fact is just withholding information and doesn't make you look like a good employee.  There is no way for you to phrase a letter now.  Good luck on your two other jobs.
