    Almond Bark

    1 pound white chocolate

    1 tablespoon butter

    1 teaspoon almond extract

    1 cup whole, unblanched almonds, toasted

    Melt white chocolate and butter together over hot water in a double boiler. Blend in almond extract then stir in almonds. Have ready a 12 x 9-inch cookie sheet covered with foil and butter well. Spread mixture thinly on cookie sheet. Break into pieces when cool.


  2. with paraffin!!! Paraffin is found in the candy making supplies at most stores. or with the canning supplies.

    I melt some paraffin in the hot bark and stir til it gets thinned enough to do what I want. Then I fish out the remainder of the bar of paraffin and let it cool. I keep this in a sandwich bag until I am ready to do another batch of dipped stuff.

  3. To thin any type chocolate, almond bark, dark, milk or semi-sweet all you do is add 1 tsp. solid shortning such as crisco. Add 1 tsp. at a time stir, add another till you have the consistancy you want.  I make a lot of truffles and by reheating chocolates they sometimes thicken up, so a little solid shortning is the best trick to thin I have had (liquid shortning is not good)

  4. Do you want to melt it?  Do it in a double boiler, with a little butter - watching and stirring it the whole time.....
