Wow, a woman after my own heart.  I not only had a similar questions (and hence, similar answer) but I have been trying to steadily work through my stack of thank you's.  I found a few phrases that are really helpful, and you can mix and match them as you go.

"Ben and I just wanted to thank you for [contributing to our honeymoon fund, the generous gift you sent, the set of pots and pans, etc.]"

"You are always so thoughtful and generous."

"It meant so much to us that you were able to share such a happy day with us and our families."

"We are sorry you were unable to make it to the wedding- it was romantic and went just as planned."

"We wanted to thank you for the [insert odd and unwanted wedding gift here... such as a cheap MP3 player].  It is certainly a unique gift."  

Good luck... I still have 35 more to go.  Oh, and set a goal.  I'm working on 5 a day, but I'll do more if I'm motivated.
