  1. McCarthy was an LAPD officer and Tactical and Self Defense instructor. He studied under the Gracies in Torrence CA and was there when the Gracies started the UFC.

Mario Yamasaki studied under the Gracies in Brazil.

Mazzagati was a trainer in Muay Thai and a boxer in Nevada before he became a ref. He actually trained some UFC fighters years ago - I'm not sure if his school is still open or not.

You have to have credentials, and be licensed with a state athletic commission first. It also helps (clearly) to know someone in the industry.

It will be hard to get in since there are tons of experienced boxing and wrestling refs that want to work for the UFC, and they prefer to use their own guys (most of the UFC's preferred refs are part of the Nevada State Athletic Commission, and the UFC tries to use them regardless of the state the match is in - Florida is notorious for denying out of state refs.)
