I see no way for you to convince a consular officer since your other question is how to stay on in the US after school.  This might seem like a big game of 3 Card Monty to you, but the American people are nearly apoplectic over these types of scams.

It is impossible to prove what might happen, but you can do your best to demonstrate what you are planning and how that will help you upon your return.

you need to sort of prove to them that you have a job lined up at home in your field of study.  If you or your family have assets (home, land, businesses) that is something they need to hear because they worry about people that don't have anything to go back to...they think those are more likely to stay in US illegally.  Good luck, they are being real sticklers (to use a nice term) now!!!!
