  1. If you registered online at www.collegeboard.com, you can go into your account, open up the registration for the test, and change the subject.

If you registered by paper or can't figure out the website, don't worry.  When you show up for the test, you're not obligated to take the biology test, just take the math test as if you signed up for it.  It doesn't matter if you take the test that you actually signed up for or not. What happens is that they'll give you a huge booklet of all of the subject tests, and you just flip to the one that you want.  You also have to write which test you took on the bubble sheet by filling in the correct bubbles, but the test proctor will tell you how to do that.

The only thing that matters is that you take the same number of tests that you signed up for.  So you can only take one subject test, not two or three.

  2. You don't have to do anything until the day of the test.  Even though you signed up to take biology, you just take whichever test you want on the testing day.  All of the tests come in the same booklet, so you can change your mind up until the test starts; you'd just turn to whichever test you want to take.

For example, I think I signed up to take Spanish last May when I was taking them, but the day of the test I decided to take Literature instead, filled in the correct codes on the answer sheet for that test, and then took it and got my scores without any problems.
