Question:

How can i get a perfect smooth surface of frosting on my cupcakes?

WITHOUT using fondant. im making like two dozen for my best friends 21st birthday. i want to just have them look uniform but in different colors and then im not sure even how im decorating them yet..

  3. If you really want to have a smooth surface on your frosting, Just dip your speading knife in hot water, wipe it off and go ahead and smooth the frosting.  :)

  4. Don't stress, just make cupcakes. To avoid the issue all together on cakes, I make spikes by just sticking the frosting knife in a little bit and pulling up, repeatedly making the whole thing spikey instead of dealing with my knife frosting marks.

  5. You could make thin icing instead of frosting, like the kind used to decorate sugar cookies.  This icing is more fluid and would sort of melt over the tops of the cakes, naturally smoothing out as it settles and then hardens.

    Ingredients

    1 cup powdered sugar

    2 teaspoons milk

    2 teaspoons light corn syrup

    1/4 teaspoon vanilla extract or almond extract

    food coloring

  6. put your spatula in hot water, pull it out and wipe off the water then spread ,  repeat

  7. Use marshmellow creme frosting.  You may tint it any color that you wish.  It is very smooth.

  9. spread the icing and then take the spatula and dip it in water and spread it over the icing again and it with make it nice and smooth

Just have your frosting a little thinner to get a smooth surface.  I use milk in my frosting, but others use water.  I'd add about a teaspoon more and beat it well again.  Add a touch more if needed.  But you don't want it too runny!  If it's too thin, put it in the refrigerator for a little bit, then rewhip.

  11. The photo that you linked is more of a glaze than a frosting. It's thinner and was not spread with a knife or spatula.

    If you are making homemade frosting add a little more water or leave out a little of the confectioners sugar.

    If you are using canned icing, put it in the microwave for about 5 - 10 seconds, take it out, stir it until it is warm and runny. Depending on your microwave this may take a few tries.  You can then either dip your cuppies or pour a little on top. You can also tint the icing before you nuke it for your color scheme.
