How can i make chocolate cookies using cocoa powder instead of chocolate?

    Ingredients for Cocoa Cookies

    1 tablespoon sugar

    2 cups flour

    4 tablespoons butter

    ¼ cup milk

    ½ cup cocoa powder

    1 egg, beaten

    3 teaspoons baking powder

    Pinch of salt

    Instructions

    Cream the shortening with the sugar and cocoa powder.

    Add gradually the milk and the beaten egg.

    Mix well.

    Mix flour, baking powder and salt and add to the first mixture.

    Roll out on floured pastry board to a thickness of 1/4 inch.

    Cut with cookie cutter.

    Bake on greased baking pan in hot oven for about 15 minutes.

    3/4 cup whole-wheat pastry flour

    3 tablespoons unsweetened cocoa powder

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    6 large egg whites

    3/4 cup granulated sugar

    1 1/2 cups packed dark brown sugar

    1 tablespoon vanilla extract

    3 ounces unsweetened chocolate, chopped and melted

    Position rack in the center of the oven; preheat to 350 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat.

    Whisk all-purpose flour, whole-wheat flour, cocoa powder, baking soda and salt in a medium bowl. Beat egg whites in a large bowl with an electric mixer until foamy, about 1 minute. Beat in granulated sugar in a slow, steady stream. Scrape down the sides, then beat in brown sugar 1 tablespoon at a time. Beat until smooth, about 3 minutes. Beat in vanilla and melted chocolate. Stir in the dry ingredients with a wooden spoon until just incorporated.

    Drop the batter by tablespoonfuls onto the prepared baking sheet, 1 1/2 inches apart.

    Bake the cookies until flat yet springy, with slightly cracked tops, 10 to 12 minutes. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely. Let the pan cool for a few minutes before baking another batch; replace parchment paper if torn or scorched

  3. This is a recipe for soft, american style cookies. I found it on the internet ages ago but i've fiddled with it a bit to make these double chocolate ones!

    Double choc chip cookies - makes 12-14

    100g porridge oats

    85g plain flour

    40g cocoa powder

    100g brown sugar

    100g white caster sugar

    1/2 tsp baking powder

    1/2 tsp bicarb

    115g choc chips

    100g butter

    1 large egg

    1/2 tsp salt

    1 tsp vanilla extract

    * you can make these into choc orange by adding the juice and zest of 1 orange or choc mint by adding a few drops of peppermint extract*

    1. Preheat the oven to 180c or gas 5. Grease and flour (or line) a flat baking tray. You may need two depending on the size you wish to make!

    2. Put the oats into a blender and whizz to make a coarse flour. In a large bowl, mix the oats with the flour, bicarb, baking powder, salt and cocoa. Set aside.

    3. In a seperate bowl, mix the butter with both sugars, beating until light and fluffy. Add the egg and vanilla and mix until smooth. Add the choc chips, stir, then add all of the dry ingredients.

    4. Mix until a wet dough forms. It should be stiff enough to handle but not dry.

    5. Flatten ping pong ball sized pieces of dough onto the prepared baking trays.

    6. Bake in the centre of the oven for approx 10 mins. This will make very soft cookies, so if you prefer crunchy ones, leave for an extra 5 mins. The cookies will not go a different colour, and will feel very soft when you first take them out. This is how they should feel because they firm up as they cool. Don't try to bake until firm because they will be rock hard when they cool!

    7. best served warm with a glass of milk!
