How can i provide proof of income if am self employed, or i work for cash?

i pay me under the table, i work for my uncle that has his own company. i want to rent an apartment, i don't have any paystubbs am also self-employed

As a self employed person you have your tax returns and financial records to prove income. If you are under the table, you are committing a crime (tax evasion) and you won't be able to prove your income.
