You will need a lot of equipment, knowledge of foods and cooking, knowledge of marketing and management, employee management, a CPA to do your payroll and taxes, an attorney, a building, a lot of recipes, a stock of supplies, and a line of credit or a lot of money.

Going to a culinary school would be a good first step.  Working in a bakery would also be good for the time being.

I want to do this too! you will need a commercial kitchen licenses and you have to start small. I try to decorate a cake or cupcakes once a week to start building skill. you would also want to watch decorating shows to learn tricks about fondant and the tools you will need.
