How can pomegranate fruit tree be sweeter? Is their a special fertilizer?

I have a big tree nd well it give allot of big juicy red fruit but it's sour. I read something to do with the ph of the soil allot to do with the sweetness of the fruit. Help!

is it all the way riped ? sometimes fruits take til late fall to be sweet
