How can you calculate a wait time in a restaurant?

I am trying to get a Head Hostess Job and they asked me to come up with some ideas for quoting a wait time. If you know anything, please help me!!

  1. i was a hostess in a resort for over a year and before that have worked as a hostess for several places. they loved me. but what you can do is figure out how long it usually takes for the kitchen to prepare the food, how long it will take for the people to eat it, then how long till the table will be ready again. usually 2 hours for the people to be at the table is a good estimate. unless they are celebrating something special, then expect them to be there longer. also you need to add in how big the restaraunt is-how many people can you seat-. so for a place like chilis or applebees expect the turnaround time to be shorter than if they went to somewhere a little more high end where it will take longer for pretty much everything. if you have any more questions i am here.

  3. this is hard . i know. if its a small pace and you get the same people you will get to know them. but if its a high turn over place (apple, rubyt. tgif) time how long a few take and make that your standard.
