  2. Oh man, buddy, that is SO time consuming!

    But if you really want to do it....

    You dunk the tomatoes in boiling water real quick, then peel the skin off. Then you strain them--there are different tools for this. I found a gadget that works, but I have no idea what it is called, sorry.

    Then you render it down, this can take all day.

    And you have to add a little baing soda to cut the acid.

    After that, just treat it liked canned tomato sauce from the store.

Easy easy.  Chop up your tomatoes (after peeling them) and place in a pot.  Saute onions and garlic and dump in with the tomatoes.  Saute mushrooms and dump them in as well.  Cook ground beef until no longer pink, drain, and dump in with the tomatoes.  Add a bay leaf and Italian Seasonings - a lot of Italian seasonings.  Bring to the boil, turn your heat down to a gentle bubble and cook until the tomatoes no longer hold their shape (if you want it that way - you can also cook it just until all is very soft).  You can add a little sugar to cut the acid.  

    Enjoy!

You don't have to peel or pre-cook the tomatoes.  Buy a dozen or more Roma tomatoes.  Brown your meat or make your meatballs...your preference.  If needed, use a little Extra Light Extra Virgin Olive Oil to prevent sticking.  Put a little water (about 1/2 c or maybe a little more) in a blender or food processor.  Rinse the Romas well and slice off the stem ends, then slice in half or fourths lengthwise.  Put in blender and blend on high speed until well-blended, or leave a little chunky, if preferred.  Pour over browned meat and sprinkle lightly with salt, pepper, Italian seasoning, and basil.  You can adjust the seasoning to taste.  If desired, add a small amount of sugar or sweetener.  If you don't like it to look pink, add a few drops of red food coloring.  Stir until thoroughly heated.    

    NOTE:  If desired, add some slices of onions and green peppers to the tomatoes when blending for extra flavor, unless you prefer to saute' them with the meat.  You may also use garlic or garlic salt.  IN OTHER WORDS, use your imagination on your favorite flavors.  You'll love the freshness of the flavor!
