How can you tell if a banana is ripe aside from it has turned yellow with brown spots?

the most common indicator is color(yellow with brown spots means its at its peak in ripeness)...but are there any other indicators that the fruit has undergone senescence/riping? can anyone give me a link so i can study it further?...it'd be a big help for our research proposal..thanks much..

You could test the starch levels with iodine.
