How come coconut milk went sour out of the fridge?.it is not real milk,milk...?

No it isn't - it's called milk because of its milky look.

But like all foods, it can go bad, and most of the bacteria, that rots food, give it a sour smell.

Not all liquids curdle, when they go bad - juice will just get colonies of green bacteria on the surface. It depends on the solids in the liquid.

It's sometimes like milk as well or rather it's food... It will go bad when leave in the open for too long

But it's still food. Did you check your fridge? Maybe it's conky.
