Yes, the US dollar is weak. No question.

Maple syrup has literally doubled in price over night!

Does anyone know why?

Is there a maple blight or something?

  1. Well, for one thing, the price of all food has gone up due to the cost in gas of transporting it. As for maple syrup, I don't know? Maybe it's diminishing??

  7. The answer lies in supply and demand.  

    Canada produces about 85% of the maple syrup in the world and Quebec produces the majority in Canada.  There has been increased demand from countries in Europe due to Canadians taking maple syrup as gifts to Europe and then Europeans acquiring a taste for it.  Likewise for Europeans visiting Canada.

    In the past few years there has been increasing demand from Japan and now China.

    Wood has increased in price as it is an alternative to oil and gas - maple syrup distilleries generally use wood. Therefore input costs have increased - marginally.

    When supply is steady and demand goes up, the producers see opportunity to make more money for the same amount of work.

    Maple trees take many years to mature so increasing supply is not viable, therefore, if you want the goods, you have to pay the market price.

    I am unhappy too and so it is back to Aunt Jemima I'm afraid.

Well as a Canadian and a former chef, I can say "bearman" is the most correct, maple syrup is a seasonal product, it is produced when the spring time temperature allow the "sap" to flow, they tap the trees by drilling a hole and setting a pail on a spigot under to catch the sap, larger operations have tubes running to a station reservoir to collect the sap.

    It has to be boiled and 40 gallons or 10 liters of sap make 1 gallon or 4 liters of syrup, and the colour and grade is dependant on the colour at the finish, so you get dark/amber or light, in the US it is Grade A/B/C.

    The last couple of years we have had cold winters that have ended quickly so the sap only runs for a short time and then stops and the tree start producing food for the leaves, plus the Canadian and US dollars have been up and down, and now the most recent bottlings and supplies might be hitting the markets, so that could be alot of the reason for the price jump.

    I like real but do buy a blend here in Toronto ON of 35% real and the rest a based pancake syrup, to bad it was not available to you down in the states.

  10. Ask the tree huggers and crazy envionmentalists who will not let us obtain our own energy supplies, not build refineries, not use nuclear energy nor damage the tufted titmouse's habitat.

    Folks, we are in deep trouble unless we wake up and provide for ourselves.

    I wish election day was April 16, the day after our tax returns are due.  Talk about term limits!
