How come when you heat milk it gets a thin layer over the top of it?

what is the layer and why does it happen when heating/warming milk up?

  1. Its just where the heat has made a skin of milk. its just what happens lol


  2. Its the skin, and your heating it to long.

  3. i feel the same way .....................WHY!!!!!!!!! I don't like when that happens so i throw the milk out

  4. It's the protein separating from evaporating water.. (it's water and not milk because 'milk' is a suspension of different substances which include water and protein)
