How come within French cuisine white sauce is eaten with beef, but red within Italian cuisine?

  1. in italy they have used what is grown plentiful throughout the ages, and tomatoes is one of their main crops, that is why all of the red tomatoe based sauces

    the french use more milk and dairy in their sauces

    a lot of sauces in french cuisine rely on one "mother sauce" (bechamel or "white sauce") and usually use prime/tender cuts of meat.

    a lot of dishes in italian cuisine use tomato based sauces and tougher cuts of meat. the acid in the tomato sauce helps to tenderize the meat.
