  1. Both true Cinnamon and Cassia will grow very well where you are. also try these guys below for plants and seeds. Both grow into medium to fairly large trees, both are rather slow growing. VERY nice for landscaping. They grow pretty well here in coastal SoCal.

Unquestionably, the cinnamon best suited to American bakers comes from the cassia type of cinnamon trees, for which there are three main producing areas - Indonesia, China and Vietnam  also in Ceylon.If the state of Louisiana has the same climate as these countries then you could probably grow it.
