    Mango have to be harvested "mature" for it to ripen, unless you want to eat it raw. Fruits that are harvested immature will never ripen correctly, often they spoiled or stayed sour.

    How to tell when they are ripe? Does color change?....it depend on the variety...some turn yellow and soft with aroma, some stay green and soften a little bit.  Unfortunately there are about 1,000 varieties of mangos in the world...and no two varieties are exactly alike.

    The more important question is "how do you tell if the mango is mature".  

    Usually the mango matures at a certain week in the year depending if they are early or late variety....when matures, the fruits usually shows some broadness in the dependent end (round buttom) and usually have less sap, unfortunately when you buy them you wouldn't know if they have sap.

    In summary: you make sure that the mangos are harvested "Mature".  Mature mangos will ripen even at room temperature.  How do you assure that the mango you buy are matured? ......  Buy it from the grove....or from a mango man !!! :)

  3. put them inside of a paper bag in a dark dry place. they may get a yellow/orangish blush to them and they will soften to touch. I go by the softness and the smell more than I do the color.

  6. Try putting them in a brown paper bag.   If they produce ethylene it will speed the ripening.  Never put them in the refrigerator.  A ripe mango is slightly soft to the touch and usually has a fruity odor, but skin color varies greatly with the hybrid.

  7. Put them in a brow paper bag for a day or too  and make sure to roll the top of the bag .Levee em until they get soft. Make sure you buy ripe mango's that are soft next time at the grocery store

  8. They turn orange alone one edge first.

    And you can ripen mangos with gas, but best just put them on the kitchen window sill
