How do I make sure I don't get methanol instead of ethanol?

  1. If you start with grain, you will get beer. If you start with fruits/vegetables/honey/etc, you will get wine. If you start with wood, you will get methanol.

    If you want to make beer or wine, get the books by Papazian and by Berry, respectively. They will take you through the steps so that your results are worth drinking.

    HOME MADE LIQUOR

    This is an excellent base for homemade liquors. Perfect for warming up parties during the winter holidays.

    Ingredients:

    1/2 cup sugar

    1/4 cup water

    1/2 cup vodka

    2 teaspoons vanilla extract *

    Directions:

    In a saucepan, combine sugar and water. Bring the mixture to a boil, then reduce the heat to low and let simmer 5 minutes. Remove from heat and cool to room temperature.

    Pour vodka and vanilla extract into the room temperature mixture. Pour the liquor into a sealable decanter; seal and store for at least two weeks before serving.

    Makes six, 1/2-cup servings

    * For raspberry flavored liquor, add raspberry extract.

    *For chocolate liquor or creme de cacao use chocolate

    *For coconut flavored liquor use coconut extract

    *For butter flavored liquor use butter extracts

    * For lime flavored liquor, use lime juice

    *For creme de menthe, use peppermint extract.

    Food coloring can also be added to the cooled mixture to add a bit of pizzazz to your alcohol drinks!

    PEPPERMINT SCHNAPPS

    1/3 cup white sugar

    1 (16 ounce) jar light corn syrup

    2 cups vodka

    2 teaspoons peppermint extract

    Directions:

    In a 2 quart pan over medium heat, combine sugar and corn syrup. Heat until sugar dissolves, stirring regularly, about 5 minutes. Remove from heat and stir in vodka. Cover and allow to cool. Stir in peppermint extract. Pour into a sealable bottle.

    Makes 16 servings

    HOME MADE GRAND MARNIER

    2/3 cup Triple sec

    1/3 cup Brandy

    1 tblsp Sugar

    Mix to disolve sugar.

    HOMEMADE CREAM LIQUOR

    1 1/4 c. almond, chocolate, orange, coffee or mint liquor

    1 c. heavy cream

    1 can sweetened condensed milk

    Shake well.

    KAHLUA

    3/4 C water

    1 C sugar

    1 1/2 - 2 C vodka

    7 tsp instant coffee

    1 C white Karo syrup

    1-2 ts vanilla flavoring

    Bring water to boil: add instant coffee. Stir; add sugar. Slowly boil mixture for 8 minutes without stirring; cool. Combine Karo syrup and vodka in bottle. add coffee syrup and and shake bottle to mix. Good on the rocks or mixed half kahlua and half milk. if you perfer not so sweet, decrease amount of Karo syrup.


  4. Good question. Let's SUPPOSE we took a gallon jug of store bought water. Then pour off 1/4 of it. We add 2 pounds of regular sugar, some champagne wine yeast and some wine nutrients and shook it up really good. Then put a balloon on it to trap the carbon dioxide gas and also keep air from getting in. We wait 2 weeks and we have alcohol.   5. brew is for beer. this process is quite easy is you have the patience and money to buy your supplies. distillation is for pure alcohol and hard liquor. I have never tried this. I would like to but it expensive to buy a still.
